Rooted in their passion for French culture, cuisine and hospitality, the couple is bringing an authentic Parisian experience to Pensacola this summer. Renaissance specializes in elevated takes on traditional French dishes, served in an atmosphere that captures the elegance of a classic bistro. Renaissance began with a location on 30A, where guests are immersed in refined details like Haussmannian wall moldings, gold mirrors, marble tables, herringbone floors and plush green velvet booths. The air carries notes of rosemary, thyme and toasted baguette while melodies from Serge Gainsbourg and Edith Piaf drift softly in the background. Though there is no formal dress code, guests are encouraged to dress beyond beachwear to match the ambiance. The newest addition to Palafox Street invites guests to step into a south-of-the-border dining experience. SalTerra Coastal Taqueria was created by Dog House Downtown owners Nathan and Lauren Holler in partnership with Nathan “Franky” Torres and his wife Melisa. The restaurant celebrates the bold, fresh flavors of Mexico and Central America, with roots in Monterrey and Mexico City. Open Thursday through Saturday evenings, SalTerra blends elevated ambiance with a relaxed, communal dining style. The menu highlights citrus-marinated ahi tuna tostadas, mahi tacos and crispy pork belly pastor, all served on hand-pressed tortillas. Melisa’s influence is deeply woven throughout, from her signature salsa verde to recipes inspired by her family traditions. Complementing the cuisine, margaritas are crafted with fresh-pressed juices and quality tequila, alongside creative variations like cucumber-mint and grapefruit palomas. Opened in March, the name behind Momotaro Ramen & Sushi was inspired by a Japanese folktale. Momotaro tells the story of a boy born from a giant peach who sets out to defeat ogres threatening nearby villages. Armed with courage and kibi dango dumplings that he shares along the way, he gains loyal companions: a dog, monkey and pheasant.
